Sweet Heat Salad Dressing

This is a great change up from standard dressings, who would've expected a kick of spice hidden among those fresh lettuce leaves. I prefer this dressing on a giant plate of fresh garden veggies, definitely a  patio party favourite!

1/2 cup olive oil
1/3 cup red wine vinegar
1/3 cup sugar
1/4 cup ketchup
1/2 - 1 tsp hot sauce of your choice (adjust to desired heat)
1/2 tbsp Worcestershire sauce
1/4 tsp salt
1/4 tsp ground black pepper
1/4 tsp cayenne pepper
1 clove garlic

Whisk well until combined. Makes 300ml. Store in fridge.

Maple Dijon Dressing

Sweet and refreshing dressing, ideal on light greens and sliced apples.
Mmm...tastes like summertime!

1/2 cup Olive Oil
2 tbsp apple cidar vinegar
2 tbsp Dijon mustard
3 tbsp maple syrup
1/2 tsp salt

Whisk together and enjoy! Makes about 200ml. Store in fridge

Thai Sweet Chili Sauce

This is a great way to change up the standard rice and steamed veggies, stir a bit into to the rice and Bam! Flavour! Again, adjust the amount of chillis to suit your preferences.

3 cloves garlic
2 red chillis (seeds too)
1/3 cup sugar
3/4 cup water
1/4 cup white vinegar
1/2 tsp salt

1 tbsp cornstarch
2 tbsp water

Throw first 6 ingrediants into blender until smooth. Bring to boil in small pot, turn simmer for 3 min.

Combine the cornstarch with few tbsp water, whisk into mixture. Simmer for 2 more minutes or until forms a good moderate consistency. Store in the fridge in small glass jar.
